Del Mar Races Open Today!

Cool as ever. That is the tag line for the races in Del Mar and it is true! Enjoy ocean breezes and have a great time watching the horse races. New Restaurant in Town


My husband and I tried the new restaurant that opened on the corner of Grand and Roosevelt Street here in Carlsbad.  So good!  Within walking distance from the Pelican Cove Inn.
This wheat pasta dish I had was terrific!  Very flavorful and light.  The pistachio gelato was a great ending to the meal.  Check it out next time you are in town!  www.cicciottis.com

The Del Mar Fair opens on Friday June 3rd and runs until July 4th.  This is such a fun event.  Farm animals, sinful fair food (love the Indian Fry Bread!!), grand stand events and so much more!  Plan to stay at Pelican Cove and you can take the Coaster to the Solana Beach train station.  There is a free shuttle that runs between the train station and the fair grounds.  Great way to go to avoid dealing with traffic. They also do a great fireworks show on the 4th.  Hope to see you there!! www.sdfair.com

Chocolate, Chocolate, Chocolate Cake


When a cake is named "Chocolate, Chocolate, Chocolate Cake", what more is needed to be said. This cake is so moist, no frosting is needed. Very simple recipe that my family and guests have been enjoying for years.
Chocolate, Chocolate, Chocolate Cake
Mix together:
1 box chocolate cake mix
1 small box instant chocolate pudding
4 eggs
1 pint sour cream
1/3 cup chocolate syrup
3/4 cup oil
6 oz. chocolate chips
Preheat oven to 350. Put mixture in a greased and floured bundt pan. Bake for 1 hour in preheated oven. Enjoy!

Flower Fields are Open!!

The beautiful ranunculus flowers are in bloom at the Flower Fields in Carlsbad. So beautiful!  Come stay at the Pelican Cove Inn and enjoy this gorgeous breath of spring.  The fields are located a short drive down the coast from the Inn.  Spring has sprung!

Giant Ginger Cookies


These cookies are delicious!  This recipe was passed on from a friend who brought them to our house at Christmas a few years ago.  We all enjoyed them so much, my husband asked for the recipe.  Hope you like them as much as we do!!
Giant Ginger Cookies
•4 ½ cups flour
•4 teaspoons ground ginger*
•2 teaspoons baking soda
•1 ½ teaspoons ground cinnamon*
•1 teaspoon ground cloves*
•¼ teaspoon salt
•1 ½ cups butter
•2 cups granulated sugar
•2 eggs
•½ cup molasses
•¾ cup granulated sugar (for rolling)
*Can substitute the ginger, cinnamon and cloves for equal amount of pumpkin pie spice.

Preheat oven to 350 degrees. Mix four, ginger, baking soda, cinnamon, cloves and salt together in a bowl. Set aside. Beat 2 cups of sugar with butter until fluffy. Beat in eggs and molasses. Add the dry ingredients and mix well. Roll dough into 2 inch balls and roll in the ¾ cup of sugar. Place on ungreased cookie sheet. Bake for 12 to 14 minutes or until light brown and puffy. Enjoy!

Peanut Butter Cups

I love this peanut butter cup recipe and it was made even more fun by making it in a gingerbread shape for Christmas.
Peanut Butter Cups

4 cups powdered sugar
1 cup melted butter
1 1/2 cups peanut butter
1 1/4 cups crushed graham crackers
Large chocolate bar, melted

Melt the chocolate in a double boiler.  You can adjust how much chocolate you wish to use.  Then mix all remaining ingredients in the order they appear, mixing well between each addition.  Press peanut butter mixture into a 8X11 inch pan.  Pour melted chocolate over top and place in fridge to set.  In making the above gingerbread man, I put the chocolate in the gingerbread shaped silicone pan first and let set in the fridge until hard.  Then I put the peanut butter mixer on top and put that in the fridge to set.  The silicone makes it easy to dump out the shaped finished product.  Then I used cake piping to decorate.
