Art in the Village
Our little Village of Carlsbad has had some positive changes in the past few years. Not to say it was ever a bad place to be...it has always been great! But, one of the additions to our great Village atmosphere are the beautiful art murals that have popped up all over town. These three pieces were done by a local artist. You can view more of his work on his website . Next time you come to Carlsbad, take the time to look around...you may see some amazing artwork in unexpected places!

Valentine Cream Cheese Chocolate Cupcakes
This is a really easy recipe. They are very moist and don't need any frosting. I hope you enjoy them!
Cream Cheese Chocolate Cupcakes
Topping:
8 oz. softened cream cheese
1 cup sugar
1 egg
Mix all together and set aside.
Cake Mixture:
3 cups flour
2 cups sugar
2 tsp. baking soda
1/2 cup cocoa powder
2/3 cup cooking oil
2 cups water
2 Tbs. vinegar
1 tsp. vanilla
Mix ingredients together in the order listed, mixing after adding each new ingredient. Beat until smooth. Batter is very thin. Pour into cupcake papers filling each 1/2 to 3/4 full. Top with 1 heaping teaspoon of the topping. Sprinkle 4 or 5 chocolate chips over each cupcake. Bake at 350 for 25 minutes. Enjoy!
