Giant Ginger Cookies
These cookies are delicious! This recipe was passed on from a friend who brought them to our house at Christmas a few years ago. We all enjoyed them so much, my husband asked for the recipe. Hope you like them as much as we do!!
Giant Ginger Cookies
•4 ½ cups flour
•4 teaspoons ground ginger*
•2 teaspoons baking soda
•1 ½ teaspoons ground cinnamon*
•1 teaspoon ground cloves*
•¼ teaspoon salt
•1 ½ cups butter
•2 cups granulated sugar
•2 eggs
•½ cup molasses
•¾ cup granulated sugar (for rolling)
*Can substitute the ginger, cinnamon and cloves for equal amount of pumpkin pie spice.
Preheat oven to 350 degrees. Mix four, ginger, baking soda, cinnamon, cloves and salt together in a bowl. Set aside. Beat 2 cups of sugar with butter until fluffy. Beat in eggs and molasses. Add the dry ingredients and mix well. Roll dough into 2 inch balls and roll in the ¾ cup of sugar. Place on ungreased cookie sheet. Bake for 12 to 14 minutes or until light brown and puffy. Enjoy!
