Raw Apple Bread


This is such a great recipe that I use from my Mom's church cookbook. Very easy and you can use wheat flour instead of white for a little heartier bread.
Fresh Apple Bread
2 cups sugar
4 cups chopped apples
2 eggs
1 cup oil
3 cups flour (white or wheat)
2 tsp. soda
1 tsp. salt
1 tsp cinnamon
1 cup chopped nuts
Mix sugar with apples and let sit for 30 minutes. In a large bowl, beat eggs. Add oil. Sift flour, soda, salt and cinnamon together. Add to egg mixture. Add apples and nuts to egg/flour mixture. Mix well. Put into greased and floured loaf pan. Bake in preheated 350 degree oven for 40 to 50 minutes.
