Cream Cheese Chocolate Cupcakes

This is a really easy recipe. They are very moist and don't need any frosting. I hope you enjoy them!

Cream Cheese Chocolate Cupcakes

Topping:
8 oz. softened cream cheese
1 cup sugar
1 egg

Mix all together and set aside.

Cake Mixture:
3 cups flour
2 cups sugar
2 tsp. baking soda
1/2 cup cocoa powder
2/3 cup cooking oil
2 cups water
2 Tbs. vinegar
1 tsp. vanilla

Mix ingredients together in the order listed, mixing after adding each new ingredient. Beat until smooth. Batter is very thin. Pour into cupcake papers filling each 1/2 to 3/4 full. Top with 1 heaping teaspoon of the topping. Sprinkle 4 or 5 chocolate chips over each cupcake. Bake at 350 for 25 minutes. Enjoy!

These were a fun new recipe we tried. My husband found the recipe in the Sunset magazine. Really good with coffee. Not too sweet. The Tall Ship Hawaiian Chieftain made an appearance in Oceanside Harbor early this month. What a lovely thing to see. Also enjoyed the view looking out of the harbor towards the ocean. Beautiful sunset. Love our weather!!

Giant Ginger Cookies

These cookies are delicious! This recipe was passed on from a friend who brought them to our house at Christmas. We all enjoyed them so much, my husband asked for the recipe. Hope you like them as much as we do!!
Giant Ginger Cookies
•4 ½ cups flour
•4 teaspoons ground ginger*
•2 teaspoons baking soda
•1 ½ teaspoons ground cinnamon*
•1 teaspoon ground cloves*
•¼ teaspoon salt
•1 ½ cups butter
•2 cups granulated sugar
•2 eggs
•½ cup molasses
•¾ cup granulated sugar (for rolling)
*Can substitute the ginger, cinnamon and cloves for equal amount of pumpkin pie spice.

Preheat oven to 350 degrees. Mix four, ginger, baking soda, cinnamon, cloves and salt together in a bowl. Set aside. Beat 2 cups of sugar with butter until fluffy. Beat in eggs and molasses. Add the dry ingredients and mix well. Roll dough into 2 inch balls and roll in the ¾ cup of sugar. Place on ungreased cookie sheet. Bake for 12 to 14 minutes or until light brown and puffy. Enjoy!

Yummy Moist Banana Bread

This Banana Bread Recipe is from my Mom's church cookbook. It is so good!

Moist Banana Bread
1 ¼ cup sugar
3 eggs (separated)
1 tsp vanilla
1 tsp soda
1 cup chopped pecans
1 cup mashed bananas (about 2)
½ cup butter
½ cup buttermilk
1 ½ cups flour

Dissolve soda in buttermilk. Cream butter and sugar. Add egg yolks and mix well. Blend in bananas, buttermilk and nuts. Stir in flour. Beat egg whites until stiff and fold into flour mixture with vanilla. Pour into loaf pan (well greased and floured) and bake at 350 degrees for 1 hour. It may take a little longer than an hour. Just check center with a knife until knife comes out fairly clean.

Angel Kisses Cookies
½ cup butter
¾ cup peanut butter
1/3 cup sugar
1/3 cup brown sugar
1 egg
2 TBS milk
1 tsp vanilla
1 ½ cups flour
1 tsp baking soda
½ tsp salt
About 30 chocolate kisses

Preheat oven to 375. Cream butters and sugars together until fluffy. Add egg, milk and vanilla. Mix well. Add flour, baking soda and salt. Form into balls (about 1 to 1½ inches in diameter). Roll in sugar. Flatten a little bit. Bake for 8 minutes. When they come out, press an unwrapped chocolate kiss into each cookie. Enjoy!

A Great Recipe For The Gluten Free Guest

This is a great recipe for those who have removed gluten from their diet. Give it a try!

Hash Brown Quiche

1 package (24 ounces) frozen shredded hash browns (thawed)

1/3 cup melted butter

1/4 cup ricotta cheese

1 cup shredded cheddar cheese

1 cup shredded monterey jack cheese

1 cup cut up cooked bacon

2 eggs

1/2 cup milk

1 Tablespoon dried onion

1/8 teaspoon cayenne pepper

1/4 teaspoon seasoning salt

Preheat oven to 425 degrees. Press hash browns into greased 9 inch pie pan. Brush with butter. Bake 25 minutes. (NOTE: I do this far the night before and then refrigerate the cooked potatoes to make less work in the AM) Put oven to 350 degrees. Spread potatoes with ricotta cheese, sprinkle on dried onion, put on cheeses and bacon. In a medium bowl, mix eggs, milk, cayenne pepper and seasoning salt. Pour over cheeses and bacon. Bake 30 minutes or until set.

Love this oatmeal cookie recipe. All but this lone cookie were eaten before I could get a photo of the plate full of cookies. It is the one on the box of oatmeal and I have never found a recipe that beats it. I had a request from a lovely couple in England to please send them the recipe. I figured I may as well post for everyone at the same time. Enjoy!!!

Oatmeal Cookies

½ cup plus 6 Tablespoons softened butter
¾ cup packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon vanilla
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 cups oats (quick or old fashioned)
1 cup raisins

Preheat oven to 350 degrees. Beat butter and sugars until fluffy. Add eggs and vanilla. Beat well. Add combined flour, baking soda, cinnamon and salt. Mix well. Add oats and raisins. Mix well.

Drop rounded tablespoonfuls onto ungreased cookie sheet.

Bake 8 to 10 minutes.

Decadent French Toast

Decadent French Toast

4 or 5 medium croissants (baked)

8 ounces softened cream cheese

1/2 cup butter, softened

3/4 cup maple syrup, divided

10 eggs

3 cups half and half

1 teaspoon cinnamon

powdered sugar

chopped pecans

Tear up croissants into a greased 13 X 9 inch casserole dish. Mix cream cheese, butter and 1/4 cup maple syrup until smooth. Spread evenly over croissants. In a large bowl beat eggs, 1/2 cup maple syrup, and half and half. Pour over croissants. Sprinkle with cinnamon. Cover and refrigerate overnight. In the morning, remove from the refrigerator. Preheat oven to 350. Bake covered for 30 minutes then uncovered for 30 more or until golden. In a small sauce pan heat the following:

1/2 cup butter

1/2 cup maple syrup

Pour over warm souffle. Sprinkle with chopped pecans and powdered syrup before serving.

Just enjoyed a lovely lunch (with lovely company...thanks Susan!!) at the Carlsbad Beach Grill. They have the BEST sweet potato fries I have ever had. The sandwich is a BLTA (Bacon, Lettuce, Tomato and Avocado) and it was delicious! The fried zucchini is served with a great apricot sauce that compliments the zucchini so well. Beautiful Double Rainbow!!

This is the beautiful sight we were met with on Sunday morning. We had hard rain during the night and woke up to this amazing rainbow. I have never seen a rainbow so vivid or so complete from end to end. Too bad I didn't have a wide angle lens to capture the whole thing in one shot. Within minutes, it was gone.

Carmel Apple French Toast

This is one of the "make the night before" recipes that I love. Enjoy!!

Caramel Apple French Toast

½ cup butter
1 cup brown sugar
2 tablespoons light corn syrup
1 cup chopped pecans
12 slices sweet French Bread (not sourdough)
6 to 8 green apples, peeled and thinly sliced
6 eggs
1 ½ cups milk
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

In a small saucepan, mix butter, brown sugar and corn syrup over medium heat; stirring constantly until thickened. Grease 13 X 9 inch pan and pour mixture into the bottom of the pan. Arrange bread slices over the caramel mixture; top with apple slices. Mix eggs, milk and vanilla together and pour over apples. Sprinkle with cinnamon and nutmeg. Cover and put in refrigerator over night. In the morning, preheat oven to 350 and bake for 50 to 60 minutes. Sprinkle with nuts and serve with whipped cream.

Raw Apple Bread

This is such a great recipe that I use from my Mom's church cookbook. Very easy and you can use wheat flour instead of white for a little heartier bread.

Fresh Apple Bread

2 cups sugar

4 cups chopped apples

2 eggs

1 cup oil

3 cups flour (white or wheat)

2 tsp. soda

1 tsp. salt

1 tsp cinnamon

1 cup chopped nuts

Mix sugar with apples and let sit for 30 minutes. In a large bowl, beat eggs. Add oil. Sift flour, soda, salt and cinnamon together. Add to egg mixture. Add apples and nuts to egg/flour mixture. Mix well. Put into greased and floured loaf pan. Bake in preheated 350 degree oven for 40 to 50 minutes.

1 3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter
1 cup sugar
1 egg
1/2 teaspoon almond extract
Milk
1/2 cup sliced almonds

Preheat oven to 325 degrees. Beat butter and sugar until fluffy. Add egg and almond extract. Beat well. Mix flour, baking powder and salt in a small bowl and add to butter/egg mixture. Divide dough into fourths. Form each into a 12 inch roll. Place two rolls 4 to 5 inches apart on ungreasted cookie sheet. Flatten to about 3 inches wide. Repeat with remaining rolls. Brush flattened rolls with milk and sprinkle with almonds. Bake at 325 for 12 to 14 minutes or until edges are lightly browned. While cookies are still warm, cut crosswise at a diagonal into 1 inch strips. Cool and drizzle with almond icing (recipe below).

Almond Icing

Stir together 1 cup powdered sugar, 1/4 teaspoon almond extract and enough milk (3 to 4 teaspoons) to make icing drizzling consistancy.

These beautiful birds are so amazing to watch. This morning when I took the dogs for a run, there were a flock of pelicans out over the ocean. They were flying so close to the water I was sure they would get wet, but they seem to anticipate every wave and stay inches above the water. With the sky all rosy pink from the sunrise and the water reflecting the pink color, it was a breathtaking sight. It makes me appreciate where I live.

When a cake is named "Chocolate, Chocolate, Chocolate Cake", what more is needed to be said. This cake is so moist, no frosting is needed. Very simple recipe that my family and guests have been enjoying for years.

Chocolate, Chocolate, Chocolate Cake

Mix together:

1 box chocolate cake mix

1 small box instant chocolate pudding

4 eggs

1 pint sour cream

1/3 cup chocolate syrup

3/4 cup oil

6 oz. chocolate chips

Preheat oven to 350. Put mixture in a greased and floured bundt pan. Bake for 1 hour in preheated oven. Enjoy!

The Beach House Restaurant in Cardiff by the Sea offers THE BEST ocean view dining in all of North San Diego County. We went this past weekend and yes, this is the view you get. When you sit outside on the patio, there is nothing between you and the ocean except rocks and sand. At extreme high tide, you can't sit outside because you will get wet. That is how close you are. The food is excellent and it is a nice 10 mile coastal drive from the Pelican Cove Inn. With our year round excellent weather, this dining experience is a must. They roast the tomatoes and it creates a wonderful smoky salsa that I have never tasted anywhere else. I am not even normally a salsa fan, but this salsa has converted me. Artichoke Quiche

Great dish for vegetarians. This is such a quick and easy recipe. I use the refrigerated ready made pie crusts which really do make this "as easy as pie" to make.

ARTICHOKE QUICHE

12 oz marinated artichoke hearts

4 eggs

2 cloves crushed garlic

pepper to taste

6 crushed soda crackers

1/2 pound shredded cheddar

Preheat oven to 325 degrees. Mix all ingredients together and put in uncooked 9" pie crust. Bake at 325 for 35 minutes. Enjoy!

Easy Breakfast Rolls

These are so easy and so yummy! Make the night before, set out on your counter overnight, put in a cold oven for 30 minutes. How easy!!

Easy Breakfast Rolls
1 package frozen dinner rolls (the dough kind, uncooked)
1 package chopped pecans
1 stick of butter
cinnamon
3/4 cup brown sugar
1 package butterscotch pudding (small package, cook and serve NOT instant)

Night before serving: Grease a bundt pan well. Sprinkle pecans on bottom. Generously sprinkle cinnamon on sides and bottom of pan. Place frozen rolls in two rows around bundt pan. Melt the butter and add the brown sugar and pudding (this is not cooked pudding, it is powder). Mix well and pour over rolls. Cover with aluminum foil and let stand at room temperature overnight.

Next Morning: Remove foil and place in cold oven. Turn oven to 350 degrees and bake for 30 to 35 minutes. Cool 5 minutes and invert onto a plate. Enjoy!!!

What a beautiful sunrise this morning! I take the dogs for a run most mornings and decided to take a couple of pictures of the beauty I see along the way. The garage with the blanket of honeysuckle is just up the street from us. It is interesting to see how a covering of flowers make such a mundane object like the garage, a thing of beauty. I suppose snow does the same thing, but I will take the flowers. It should get into the 70's today. If you are not quite ready for Fall and Winter, our Summer is continuing. Come see us!!

This was a lovely couple from Germany that stayed with us last week. Iris and Jens were such a delight. They stayed with us for a few days then went to see other parts of the Southwest. Having a bed and breakfast often puts me in the position to try to accommodate dietary needs that I may be unfamiliar with. It is always a challenging educational experience when I have a guest arriving at our bed and breakfast that has certain restrictions or needs. Peanut Butter Cookies

This is simple recipe for Peanut Butter Cookies and it is delicious. It is funny how using a fork to make the criss cross on the top is something that brings back childhood memories for so many people.

Peanut Butter Cookies

1 1/4 cup flour

3/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup butter

1/2 cup peanut butter

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 egg

1/2 teaspoon vanilla

Preheat oven to 375. Stir together flour, soda, and salt. In a separate bowl, cream butter, peanut butter and sugars until fluffy. Add egg and vanilla. Beat well. Add dry ingredients to beaten mixture and beat until well combined. Shape into 1 inch balls and roll in granulated sugar. Put on cookie sheet and criss cross with a fork. Bake about 10 minutes.

The local Chamber of Commerce is so good at referring people our way. It is greatly appreciated. We decided to say "Thank You" with cookies. This Chocolate Chip Cookie recipe is a little unusual. It was found on the Internet at allrecipes.com and we have been using it ever since. It makes a beautiful basket and they taste great! Enjoy!

Best Big, Fat, Chewy Chocolate Chip Cookie

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup melted butter
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

Preheat oven to 320 and grease cookie sheets

Sift together flour, baking soda and salt; set aside.

In a medium bowl, cream together melted butter and sugars. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until blended. Stir in chocolate chips. Drop cookie dough 1/4 cup at a time onto prepared cookie sheet about 3 inches apart.

Bake 15 to 17 minutes in the preheated oven or until edges are lightly browned. Cool on racks and enjoy!

September is the perfect time to come to Carlsbad. If summer is over, someone forgot to let Carlsbad know. Our water and air temperatures are perfect. Our air temperature today is 73 degrees with a light breeze off the ocean and with kids in school, the beaches are quiet. The water temperature is around 66 degrees which is a little cooler than normal, but still wonderfully refreshing. The mornings are crisp and fresh. Perfect for walking down to the ocean with a cup of hot coffee. Come and experience our endless summer.

Cherry Blintz Souffle

This is another great make the night before recipe. The blintzes you use are premade, frozen blintzes. They come in cheese, cherry, apple and blueberry. The original recipe called for the cheese, but I prefer the fruit ones. Sprinkle nutmeg on the cherry and blueberry and put cinnamon on the apple. Delicious!

BLINTZ SOUFFLE

3 tablespoons melted butter
1 box (13 ounce) frozen blintzes
4 eggs
1 1/4 cups sour cream
1/4 cup orange juice
1/2 sugar
2 teaspoons vanilla extract
Nutmeg

Pour melted butter into 11 X 7 inch glass baking dish. Place blintzes in dish in single layer. In a medium bowl, mix remaining ingredients and pour over blintzes. Sprinkle with nutmeg. Cover and refrigerate overnight. In the morning, preheat oven to 350. Uncover and bake 45 to 55 minutes or until puffed and golden. Six servings.

Harbor Fish Cafe is delicious! Great lunch place with good fish tacos, fish and chips and other grilled fish specials. Very casual with outside seating that can view the ocean. The tables are picnic tables and each has a roll of paper towels for your napkin. It is located just a few blocks away from the Inn, so next time you are here, give them a try!

Carrot Cake Cup Cakes

This is a recipe from an old church cookbook from my parents church. You can't beat the tried and true recipes from way back. The only alterations I made was to do half of the flour wheat flour and to make them into cupcakes instead of a cake. Hope you like it!

CARROT CAKE CUP CAKES
1 cup wheat flour
1 cup white flour
2 cups sugar
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
1 1/4 cups vegetable oil
4 beaten eggs
2 cups grated carrots

Mix oil and sugar. Add eggs, dry ingredients and carrots. Put into muffin tins (either greased and floured or with cupcake liners). Bake at 350 for 25 to 30 minutes.

ICING
8 oz. Cream cheese
1/4 cup butter
4 cups powdered sugar
1 tsp vanilla
1/2 cup coarsely chopped pecans

Mix first four ingredients with a mixer until smooth. After cupcakes cool, frost and sprinkle with nuts.

Scotch Eggs

Scotch eggs are so easy to make and are usually a hit with adults AND kids. Below is the recipe for the eggs and also the sauce.

SCOTCH EGGS

The night before:
Hard boil the number of eggs you want to cook, peel them and refrigerate overnight.

In the morning:
Move oven rack to top third of the oven and then preheat oven to 450
Take 1 chub of ground sausage (I use Jimmy Dean HOT) for every five eggs
Squeeze out each chub into five equal blobs
Wrap egg in sausage and pack like a snowball
Put in uncovered baking dish and bake for 30 minutes

SAUCE

2 TBS butter
2 TBS flour
1 cup chicken broth
1/2 cup evaporated milk
1/2 cup shredded cheddar cheese
1 tsp ground mustard
pepper to taste

Melt butter in a saucepan and add flour to make a rue. Add chicken broth and milk, mix well and heat to thicken. Add mustard, pepper and cheese. Mix well and serve over scotch egg.
Enjoy!

They even have a little wine shop attached to the restaurant that you can select a wine from and just pay a corking fee to enjoy your selection with your meal. The little chocolate shop next door is also owned by the same people and will satisfy your sweet tooth. Good food, chololate and wine...what more could you need?

Ham Asparagus Strata

Great recipe that you make the night before. It is also really good vegetarian style. Just leave off the ham.

Asparagus Cheese Strata

1 pound fresh asparagus
2 1/4 cups shredded cheddar cheese
1 cup coarsely chopped cooked ham
5 eggs
1 3/4 cups milk
3/4 teaspoon each dry mustard and Worcestershire
2 Tablespoons instant minced onion
6 slices whole wheat bread
1/4 teaspoon each salt and garlic powder
Dash Cayenne pepper

Remove tough ends from fresh asparagus and cut into 1 inch pieces. Drop into boiling water to cover and cook rapidly until just tender (about 4 minutes). Drain and set aside.

Trim crusts from bread and fit into the bottom of a greased 7 X 11 inch baking dish. Sprinkle 1 1/2 cups of the cheese over bread. Top with ham and asparagus. Sprinkle dried onion on top.

In a bowl, mix eggs, mustard, Worcestershire, salt, garlic powder, cayenne and milk until well blended. Pour over layered ingredients. Cover and refrigerate at least 8 hours or over night.

Bake, uncovered, in preheated 350 degree oven for 30 minutes. Top with remaining cheese and cook another 10 minutes or until firm. Let stand 5 minutes before cutting into squares. Makes 6 to 8 servings.

What a great dining experience we had at Casa de Bandini www.bazaardelmundo.com/bandini/ ! I do wish this restaurant was within walking distance of the Inn. It is a short drive away located in the Forum shopping center in south east Carlsbad. It is owned by the same people that had Bazaar del Mundo in Old Town. Really fun, festive atmosphere. Beautiful bar area. Homemade tortillas and HUGE margaritas...YUMM!

I just returned from taking our two dogs to the Agua Hedionda Lagoon for a walk. It is so beautiful. We are fortunate to have three lagoons here in Carlsbad for all of us to enjoy. So lovely to walk the short two blocks to the beach and watch the sunset. There is a trumpet player that often plays taps at Dini's just as the sun sets. Sometimes there is another trumpet player in the condos across the street from Dini's and he will play echo. They have it timed to play the last note as the sun slips into the Pacific ocean and disappears. It is a beautiful treat for the eyes and the ears. Gives me goosebumps every time. Then everyone cheers when it is done. Come see for yourself!
