Love this oatmeal cookie recipe. All but this lone cookie were eaten before I could get a photo of the plate full of cookies. It is the one on the box of oatmeal and I have never found a recipe that beats it. I had a request from a lovely couple in England to please send them the recipe. I figured I may as well post for everyone at the same time. Enjoy!!!Oatmeal Cookies
½ cup plus 6 Tablespoons softened butter
¾ cup packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon vanilla
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 cups oats (quick or old fashioned)
1 cup raisins
Preheat oven to 350 degrees. Beat butter and sugars until fluffy. Add eggs and vanilla. Beat well. Add combined flour, baking soda, cinnamon and salt. Mix well. Add oats and raisins. Mix well.
Drop rounded tablespoonfuls onto ungreased cookie sheet.
Bake 8 to 10 minutes.
